Title: Variable vs 3 speed wiper operation, any preferences?

I have the original 3 speed wiper motor and switch out of my 73 Challenger. I also have another 1970  frame, cluster so forth, which has the variable wiper switch. My understanding is the wiper motor is the same for both, just the connection is different. So am I right to assume that given the correct motor connector, I can choose either? Also, what is really the better set up for driving for those that have used both? The car is a 1970 tribute resto mod, therefore drivability is a bigger concern then correctness.
