Does the s spring on the door hinges get body color paint?

Yes
You paint the whole hinge at once. If you know how to remove the spring , you can do it and reinstall the spring. It would be for looks only though. No benefit.
A few recommendations for trouble free service.
Mask off the rollers/door checks to keep paint out if wave spring area. This helps keep the rollers free.
Also do not paint the side that mounts to the doors/body. Just a very light dusting /primer will do fine. You want a tight fit . This is the way the factory painted them, after being installed on the body. Only use a dry type lube on the door checks from time to time.
Oil and grease just attract dirt.

Thanks Leo and Alan, are the hinge bolts painted or black oxide?
The bodies were completely assembled BEFORE paint with the exception of the front valance which was hanging in the windshield area during paint. Fenders, hood, doors, trunk lid and rear valance were all on and it was painted as an assembly.

No specific brand. Anything with PTFE that dries. I lube them initially when I rebuild them with straight Military grade teflon.
