6BBL mechanical carbs

Hi Guys.  It's been 10-12 since I built my car.  It been awhile since I posted here too, but I follow along every week just to keep up.  I got side tracked with a little Porsche recently, but Im moving back to my 71 Cuda to address a few things that I want to change since I initially built it. 
  My 6BBL carbs are not very conducive to driving my pro touring set up Cuda.  The carbs have horrible reaction coming out of sweeping corners.  The primary carb runs out of air and fuel as I as for more.  I have to mash the pedal mid corner to open the secondaries, then let off to catch the carbs before they shut down and then modulate the throttle feed as I apex the corner.  Not very good for performance driving.  Most say I should just get a 4bbl.  I dont want the ordinary.  I do have a set of 1980s mechanical 6BBL carbs and linkage.  I have been told that they have much better response and control than the drag race inspired vacuum secondaries that are best used at full throttle all the time.
  Mine mechanical carbs look like they are pretty clapped out and need everything to work again. Who should I send them to for a total rebuild? Holly Restoration shop?  Harms Automotive? Anyone else that does it less expensive?  My catch is that I dont have a stockish engine.  I have a 520 in stroker making 550hp and big big torque.  My current carbs have Quick Fuel jet plates.  Can I just swap the plates or do I need the carb rebuild service to set the carb up exactly as my current carbs are? Will these carb rebuild places set them up for high performance or just stock and I have to start over when I get them?

That will really be a good swap for what you need. All 3 carbs have jets and accelerator pumps so they are super easy to set up. They just need cleaning and gaskets which is easy to do yourself without paying a thousand dollars to have it done. Ive run those on street cars a few times and they are much easier to get working right than the vacuums are. Stock, the outboards are probably jetted close to what you need. The center carb may be 2 or 3 sizes rich but try it anyway to make sure.
The CFM is 940 when rated the same way a 4bbl is so its bit light for topend power but response and driveability will be really crisp.

My carbs are pretty ratty.  The throttle plates are sticky.  They look black like they were in a fire.  Im pretty sure I want a professional setting these up.  If they were just decent enough but not used recently, I would give rebuilding them myself a go, but I think these are needing more help than I can give them. 
So I am still looking for a recommendation on a good rebuilder who isn't wanting crazy money.  Holly may be my first choice.  Unless someone can steer me in a better direction

I did a little fact finding today on my Holley 4782 and 4783 carbs.  Looks like the outboard carbs are 355cfm like the center and were made for small block cars.  I have a 550hp stroker big block.  Will these be too small to flow enough air to my monster?  I dont want to waste money and time if it is just too small.  I know that they can be re-jetted and have new squirters fitted.  But is this really the right 6BBL set up for me?  I have been told they will work, and I am questioning what I am reading now. 
  Still haven't gotten a good suggestion where to rebuild these.  I am leaning towards working with Holley since these are their carbs. 
  Anybody have any experience with these carbs on a big block?  I really want to move on from my vacuum secondaries.

As I stated they worked well for me. I took off a Torker and 850 and installed the 4782 and 4783 setup on a stout 440 and it was very smooth and tractible. Your 505 is 12% bigger so in a similar build I think it would work great with terrific throttle response.
However if the cost to refurb the carbs was a lot (say $1k) I might just consider a six pack based FI setup for what you want to do. Main reason being carb float control in hard cornering. My cars were street performance with non cornering radial T/A tires, so I would expect a lot stronger side forces with your car. If you can get them rebuilt reasonable, by all means try them.

Thanks for the feedback avatar_RUNCHARGER @RUNCHARGER. 6BBL EFI is an option.   It will be very pricey, but if the throttle control and power are worth it, I may save for a little longer and do the expensive and technical route. 
  I will talk to Holley next week to hear their recommendations.
