Fuel Pressure - Is this an odd issue?

I have, what seems to me, odd behavior on my Challenger

Here is my setup

Edelbrock electric fuel pump (5-7 psi rated) to an Edelbrock 1406 Carb, Edelbrock performer manifold. Nothing fancy - pretty straight forward. I have a clear fuel filter in between the pump and the carb.

What I am seeing is the fuel filter slowly empty and then when almost all the gas i gone from it, it floods with fuel again. Then the process repeats. I've sat there and watched this happen three times. The car continues to just chug along just fine - no worse for wear. This is all at idle speed.

Is this normal? Is this just the bowl check valve on the carb opening and closing? It just strikes me as odd behavior, I've never seen a fuel filter draw almost completely down then suddenly refill.

Thoughts?
