Stock Carb Jetting

I just completed bringing my engine back to stock, changing the cam, and exhaust. The carbs were jetted, for a race-type cam, headers, and 3" exhaust. With today's gas, is using the stock type jetting correct? Richer, leaner? It's a stock 426 hemi. What are your opinions?

I won't claim to have a ton of experience here, but based on my experience tuning my 383 with a wideband A/F meter, I'd guess that the stock jetting would be a good place to start for your situation.  I haven't totally dialed in my tune, but I'm currently pretty close and am at stock jetting.  Hopefully some others with more experience will also chime in.

With our gas I find that the stock Hemi jetting is a bit lean. Your fuel is most likely different than ours though. I would suggest going to the stock staggered jetting and metering rods and try it. If it is lean then jet up all 8 positions a siimilar percentage. I have done that in the past and it works great for me (it does take a bit of math to work out the jet minus metering rod area on the primaries though). 5% is about all I go up at a time.
