I am definitely wanting to make it original, so if the aftermarket hangers are good reproductions, I will probably just do that

Hard to say why they replaced them...stripped the threads, broke a stud, wanted a rated fastener, etc.

You probably could find studs to replace the bolts. My concern would be if they opened up the hole for bolts, you might have to get a bigger base on the stud to swedge them into the new hole. Probably can find these if you have access to a good industrial fastener supplier. Otherwise, buying new brackets is probably easier and less time consuming, and they are accurate replacements if originality is a concern.

I am guessing the studs would not fit in those brackets tightly. I would just look for good used replacements with the studs intact. I am also guessing last time someone had them out and broke a stud or two off and that's why they just went with the grade 8 hardware instead.
