I've been watching some youtube videos, and noticed people cutting out sail panel seams/a pillar seams and butt welding them. I'm leaning towards retaining the factory seams, welding them and bridging the sail panel seams with steel to reduce filler thickness.

I have half of my sails done. I welded the seam solid then fit a metal bridge piece and welded that solid.

I haven't done my apillars yet, but I was thinking of running my a pillar up to the factory a pillar seal and welding that solid.  Although I know the replacement part is supposed to go under the roof I'm not gonn apull a mint roof skin for that purpose.

Thoughts on the idea of cutting out the seams/laps?

I'd say do it the way you were going to and if done properly, you should have no problems. Just make sure your heights are good.
