Rallye gauges, new to me

You are correct. I did get the harness with the rallye gauges too, so I'd swap it all over.

It also appears to have the variable speed wiper switch

J25 "three-speed windshield wipers" were part of the A62 "rallye gauge cluster" package

What's your car, 2 speed or variable speed. Those variable speed switches bring some decent money.

My car is a 2 speed. But I have a 3 speed motor and wiper linkage set from a highly optioned 73 I used to have.

From the picture of your rallye dash it looks like you're missing the clock cable and attaching nut. Or is it broken off and not visible.

The clock cable is there on the back, threaded into both ends as it should and not seized, the knob itself is missing on the cluster bezel, but I can see the cable end in there.

In those links to the knobs. How do they install? I see they come with a little roll pin looking piece. How does one assemble them?

That's not a roll pin it's called a barrel nut. It goes down the center of the knob and screws/tightens with a small screwdriver. I've always used a jeweler's screwdriver.
