I'm looking at the buildsheet and for the carb it says 30, car is a 1971 Cuda 383 AT, want to know what carb is correct Carter 6125 or a Holley.

Have you looked at the 1971 parts book? 30 should be the last two digits of the carburetor part number.

I dont have a 1971 parts book, thought someone here should know, there was a discussion over at the FB page but I did leave that page.
