I lived 1000s of miles from a nascar track , never got to see any of these cars for real , could not even watch on TV as no one covered the races & couldn't even get results in the newspaper the next day , I even called the papers & TV stations to complain .
Havins said that I bet I could figure out how to make simple covers

In the era pictured, these cars were so fabricated that they simply riveted a sheet of steel in front of or behind the headlight area.

I  have created and put covers on my Challenger in anticipation of  those track days were they might request the headlights be tapped up. No way of easily putting them on without drilling. I limited mine to 2 screws per side, holding .125 thick ABS sheet, painted to match the grill surround. Drill holes are .125 as well, so not hugely obvious, but holes none the less.

I'm sure a creative person could come up with a less invasive attachment method using some clips mounted behind panels. But when the covers are off, you will have these exposed clips visible.
